Almond Flour Banana Bread
Ingredients:
3 Very Ripe Bananas - make sure they are brown
3 eggs (large)
¼ cup natural sweetener (I use honey)
¼ cup melted coconut oil (or a mild oil, avocado oil is also what I use sometimes)
3 cups almond flour
1 tsp cinnamon
1 tsp baking soda
Vanilla Extract
1 tsp baking powder*
¼ tsp salt
Instructions:
Preheat oven to 350 degrees, line 9 x 5 loaf pan with non stick spray, set aside
Mash bananas in mixing bowl
Add eggs, sweetener, oil, vanilla, cinnamon, baking soda, baking powder, and salt, whisk all ingredients until combined
Add flour and mix gently with spatula to combine
Pour batter into loaf pan and bake for 50 minutes (or until toothpick stuck in middle comes out clean)
I love this recipe because it’s a healthier option to regular banana bread and my children and husband love it. You can add a half cup of walnuts or chocolate chips if you want to add a little crunch. In the past I have added a quarter cup of ground flax seed to the almond flour and mixed it in to add more health benefits. This tends to give the bread a nuttier flavor and make it less sweet so if you do that maybe add a bit more sweetener as well.
*Baking powder is not typically gluten free (it’s made with wheat starch or cornstarch so check the label) and it also is not paleo friendly. Mix 2 parts cream of tartar, with 1 part baking soda, and 1 part starch of choice (tapioca, arrowroot, organic potato) if you wish to make it gluten free and paleo.
